Christmas Butter Cookies

 

 

 

Hello December! Hello Christmas cookies.

This is only one recipe of our favourite Christmas cookies, but there’s no icing on them. We just sprinkled powdered sugar instead, because I am not a fan of icing but you can totally add that if you wish. I just find it too sweet.

The cookies are not very sweet at all because sugar is another thing we try to keep to a minimum, so if you have a sweet tooth add more sugar or  just add icing and I’m sure they will be perfect for you.  

You will need:

  • 150g butter, softened
  • 100g sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 orange zest
  • 340g flour + some extra for when rolling the dough
  • 1 teaspoon baking powder
  • 1 teaspoon salt

In a large bowl, mix the butter with the sugar until it looks like a paste and the sugar is mixed well. Add eggs, vanilla, cinnamon, orange zest and mix well.

Mix flour with baking powder and salt and add to the mixture a bit at a time.

Let the dough refrigerate for 2-3 hours after which you will roll out some of it on a well floured surface to about 1/4 to 2/4 inch thick. Heat oven to 175°C and cut your cookies with the cookie cutter.

Keep rolling out the rest of the dough until it’s all finished. Line your tray with baking sheets and bake for 15-20 minutes or until light golden brown.

Set aside to cool and then sprinkle with powdered sugar.
